Peruvian dried black potatoes. Also known as Chuno or 'Tunta'. Chuno is one of the oldest food in the world found in the highest mountains in Peru. There is also a lot of food in the Bolivian kitchen. The extreme temperatures in the Peruvian Andes mountains make it possible to freeze potatoes outside at night. Then the potatoes are dried in sunlight. This preservation method is called 'freeze drying; and ensures that the flavor is preserved, while the potatoes can be stored longer.
If the potatoes are not washed during the freeze-drying process, the potatoes are called black and black Chuno (Chuno negro). There are also white chuno. These have been washed during the freeze-drying process.
