What is Gochujang Chicken?
Crispy Gochujang Chicken is Korea’s answer to fried chicken: double-fried for an ultra-crunchy bite, then tossed in a sticky, spicy glaze made with gochujang chili paste. It’s crispy on the outside, juicy on the inside, and dangerously addictive.
This street food favorite is perfect for weeknight dinners, gatherings, or whenever you’re craving something bold and flavorful. With just a few essential Korean ingredients, you can make this iconic dish right at home.
Ingredients (serves 2–3)
For the chicken
500 g boneless chicken thighs or wings
1 tsp salt
½ tsp black pepper
1 tbsp soy sauce
1 tbsp mirin (optional)
1 egg
2 tbsp all-purpose flour
4 tbsp cornstarch
Oil for frying
For the sauce
2 tbsp gochujang (Korean chili paste)
1½ tbsp ketchup
1 tbsp honey or sugar
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 garlic clove, minced
1 tbsp water
For topping
Toasted sesame seeds
Chopped scallions
All ingredients are available in our Korean pantry collection, including gochujang, soy sauce, sesame oil, and cornstarch.
Instructions
Cut the chicken into bite-sized pieces and season with salt, pepper, soy sauce, and optional mirin. Let marinate for 10–15 minutes.
Add the egg, flour, and cornstarch to the chicken and mix until evenly coated.
Heat oil to 170–180°C. Fry the chicken in batches for 5–6 minutes, then drain. For extra crispiness, fry again for 2–3 minutes.
In a small pan, combine all sauce ingredients. Simmer on low heat until slightly thickened and glossy.
Add the fried chicken to the sauce and toss until fully coated.
Serve immediately with sesame seeds and scallions. Enjoy with steamed rice or as a snack.

Mix cornstarch with flour for that perfect crispy coating. Double frying is the secret to Korean-style crunch.

Use chicken wings or drumsticks instead of thighs
