Three Cup Chicken, also known as "San Bei Ji" (三杯鸡), is a traditional Taiwanese dish so named because of its three main ingredients: sesame oil, Chinese rice wine, and soy sauce. These ingredients are used in equal proportions, which gives the dish its characteristic taste. The preparation of Three Cup Chicken is simple but produces a rich and aromatic result. Chicken pieces are fried in sesame oil, enriched with garlic, ginger, and whole peppers. The whole is then deglazed with rice wine and soy sauce, after which it slowly simmers until the sauce thickens. Traditionally, Three Cup Chicken is served in a clay pot, which adds to the depth of flavors. It is not only a warming comfort dish, but also a beautiful illustration of the simplicity and richness of Taiwanese cuisine.

  1. Heat the sesame oil in a large pan over medium heat. Add the garlic, ginger and whole chili peppers. Fry for a few minutes until the aromas are released.

  2. Add the chicken pieces and fry until golden brown on all sides.
  3. Reduce the heat and add the Chinese rice wine, light soy sauce and dark soy sauce. Stir well so that the chicken is evenly coated with the sauces.
  4. Cover the pan and let it simmer over low heat for about 20 minutes. Stir occasionally to prevent the sauce from sticking to the pan.
  5. Serve warm with rice or noodles.
