Yangzhou Chao Fan, often also called "Yeung Chow", or "Young Chow", is a rice dish whose name originates from the city of Yangzhou in eastern Jiangsu province, China. “Chao Fan” is literally translated: Fried Rice. Nowadays, this dish is a staple in Chinese restaurants all over the world and has many protein variations. In this recipe we share the secret of the perfect Yangzhou fried rice.

The main difference between Yangzhou fried rice and normal fried rice lies in the ingredients and preparation method. Yangzhou fried rice differs from normal fried rice by using multiple proteins such as pork, shrimp, chicken and eggs.
The key to making the perfect Yangzhou rice dish is to use day-old, refrigerated rice. The rice will then be drier and help absorb the flavors without making the dish mushy.

Ingredients and supplies

  • Day-old cooked and cooled white Jasmine rice
  • 100 grams of pork (cha sieuw or ham cubes)
  • 100 grams of shrimp, peeled and cleaned
  • 2 eggs, beaten
  • 1/2 cup frozen peas
  • 1 spring onion, chopped
  • 1 carrot, finely chopped
  • 2 tablespoons oil for cooking
  • Salt
  • White pepper
  • 2 Tbsp Light soy sauce

  1. Start with your vegetables. Peel your carrot and cut it into small cubes. Then chop 1 spring onion.
  2. Cut your pork into cubes or use diced ham and set it aside.
  3. Beat two eggs in a bowl with a pinch of salt.
  4. Bring a saucepan of water to the boil with half a teaspoon of salt and add carrots and peas, cook this for 30 to 40 seconds. After 30 to 40 seconds, add shrimp and then cook for another 2 to 3 minutes. Then drain everything and set it aside.
  5. Heat a tablespoon of oil in a wok or large frying pan over medium heat and stir in the beaten eggs. Once the eggs start to set, add the rice and stir to combine all the ingredients.
  6. Add your pork and chopped spring onions and stir-fry again for about a minute.
  7. Add the peas, carrot and shrimp. Season with salt, white pepper and soy sauce.
  8. To finish it off, pour a tablespoon of oil along the edges to fry until crispy.
  9. Serve the Yangzhou Chao Fan with a crispy chilli oil for a spicy kick!

    Remember, the key to perfect Yangzhou fried rice is to use cooled rice. Chill your rice a day in advance to get the perfect texture and flavor. Happy cooking!
