  1. Cook 1 cup of Japanese rice. Check out our guide here to choose the best type of rice for your dish, and here for the guide on how to cook rice.
  2. Slice the chicken diagonally into thin pieces.
  3. Marinate the chicken in Sake.

  4. In a pan, combine soy sauce, mirin, and dashi. Then bring to a boil.

  5. Add chicken and onions to the pan and let it simmer for 5 minutes.

  6. Whisk the eggs in a bowl. The egg white and yolk don't need to be completely dissolved, you can have large pieces of white and yellow visible.

  7. Gradually pour the roughly beaten eggs over the chicken and onions.

  8. Cover the pan and let it cook for another 5 minutes or until the eggs are set.

  9. Serve over a bowl of cooked rice and enjoy!
