Hikari Craft Miso Nama Koji is an authentic Japanese miso, traditionally fermented with nama koji (living koji culture) for a deep, complex flavor. This miso is unpasteurized and contains active enzymes that provide a richer umami and a subtle sweetness derived from the rice koji.
