Nixtamalized blue is a gluten-free cornmeal with a more intense, nuttier flavor than white or yellow varieties. Use for authentic Mexican dishes - such as tortillas, tacos, gorditas, and tamales. Naturelo blue masa harina is made from an old variety of blue corn. The seeds are dried, boiled and then soaked in mineral-rich lime water before being ground into a fine flour. The flour is a very pale blue-gray.
