Preparations: Lamb Rogan Josh recipe. serves 4
- Heat 3tsb oil in a pan and add 1 medium diced onion, fry until soft.
- Add 1tsp finely chopped ginger, 1tsp finely chopped garlic, 1tbsp of tomato puree and 1/2 a jar of Patak's Rogan Josh spice paste, cook for 1-2 minutes. Add 50mL of water, cook until the water has evaporated.
- Remove from the heat, stir in 1 tbsp yogurt, return to heat, add 500g diced lamb, cook until sealed. Add 150mL water and simmer covered until the lamb is tender (approx. 30minutes).
- Add 200g chopped tomatoes and simmer uncovered for 10 minutes, season to taste, garnish with fresh diced coriander and serve with rice or naan.
