Chinese rice vinegar

A rice vinegar is made of water, glutinous rice, wheat bran, sugar and salt. This is also called white rice vinegar. This leads to a mild taste that is somewhat similar to white wine vinegar. It is delicious to combine with cold dishes such as salads, but also in stir-fries, noodles or as a dip for dumplings.

Black rice vinegar

There are different types of rice vinegar, each with its own unique characteristics. For example, black rice vinegar, which is also called Chinese black vinegar. There are two types of this, namely a thin, tart variant and a sweet variant. The sweet black rice vinegar variant is delicious with dishes with eggplant, as a dip sauce with fried, stuffed tofu sheets or with yinyin sauce for jiaozi. The tart black rice vinegar variant needs a bit more care and is delicious in chicken kung pao or hot and sour soup.

Red rice vinegar

Another rice vinegar variant is red rice vinegar. Red rice yeast is added to this, which provides a soft vinegar taste and is comparable to red wine vinegar, only this is a bit softer and spicier. This red rice vinegar is delicious as a dip sauce for dim sum, shrimp or oysters.
