How is Panko made?

Like breadcrumbs, panko is made from bread. Western breadcrumbs are baked in the oven, but Panko is made by placing the bread against metal plates that contain an electric current. This actually steams the bread from the inside, so that no crust forms. The bread looks more like a kind of tofu and is then ground into the airy flakes that we call Panko!
