What is miso soup?
Miso, or fermented soybean paste, is the ingredient that miso soup is made of. This miso is then mixed with dashi. This is a broth made from kelp (a type of seaweed) and bonito flakes, also called katsuobushi (fermented, dried and smoked tuna) until miso soup is created. A standard miso soup usually consists of miso, dashi, cubes of tofu and dried seaweed leaves. It can also be supplemented with spring onion, cubes of fish, daikon and/or mushrooms. This way you can have a delicious miso soup on the table in no time!
How do you prepare miso soup?
Before you start preparing miso soup, it is important that you do not boil this Japanese soup, but only heat it and let the ingredients soak in it. Start with the miso broth (kelp) and as soon as the water is almost boiling, add the bonito flakes. Let this soak for five minutes and your dashi is ready. Then add the miso paste and as soon as this has dissolved, you can add the rest of the ingredients. Et voilà, that's how you make a real Japanese miso soup!
