What is Korean kimchi?

Kimchi is a traditional dish fromSouth Koreancuisine. It consists of fermented cabbage and vegetables. The word kimchi is usually translated as sunken vegetable and this refers to the preparation method, in which the vegetables are pickled. Kimchi has been around since ancient times, it is already 2600 to 3000 years old. Kimchi can vary in taste and color and there are more than a hundred variants of Korean kimchi. In general, the variant with the Chinese cabbage is meant, other ingredients are radish, spring onions, garlic, sesame, ginger, rice powder and salt. Usually fish, such as anchovies, or other seafood, such as squid, shrimp, oysters or mussels are processed in the kimchi.
