Oatmeal raisin cookies recipe
prep time: 15 minutes Cook time: 10-12 minutes.
- 1 1/2 cup Arrowhead Mills glutenfree all-purpose flour.
- 1 tsp baking soda.
- 1 tsp ground cinnamon.
- 1/2 tsp salt optional.
- 1/2 cup (1 stick) plus 6 tablespoons butter, softened.
- 3/4 cup Hain brown sugar.
- 1/2 cup granulated sugar.
- 2 eggs.
- 1 tsp vanilla.
- 3 cups oats (quick or old fashioned uncooked).
- 1 cup raisins.
Heat oven to 350°F. Combine flour, baking soda, cinnamon and salt. Separately, cream together butter. Add eggs and vanilla. Mix well. Add flour mixture. Continue mixing until well blended. Add oats and raisins. continue mixing until uniformly distributed in the dough. Drop heaping tablespoons onto ungreased cookie sheets lined with parchment paper. Bake for 10-12 minutes or until golden brown. Remove from oven and let cool for 1 minute before moving cookie to a wire cooling rack. Let cool completely. Store in a tightly closed container, Makes 4 dozen cookies.
